A really nice gift to give yourself on Christmas morning is to prepare your special holiday breakfast the night before. No one wants to spend a beautiful holiday morning in the kitchen. Spend it with your family instead, and choose things to make that will require very little prep and cooking on Christmas day! This Night Before Christmas Coffee cake is one of those make-ahead recipes.


This coffee cake recipe is from my childhood babysitter, Mrs. Laudano. For years, Mrs. Laudano watched my brothers and me on Wednesday nights while my parents went to choir practice at the church. She liked to sit in the same spot on the couch the whole evening, dozing on and off. Every week I hoped she would sleep past our 8:30 pm bedtime, so that we could stay up late and watch TV, but she never did! Mrs. Laudano impressively woke up at 8:29 pm every time.

Aside from being gifted at punctual napping, Mrs. Laudano had the best recipe for homemade coffee cake. She liked to bring a cake to our family on Christmas Eve for us to enjoy the next morning. We looked forward to the way the coffee cake made the house smell while it baked.


This coffee cake is really easy to put together and the best part is that you do everything the night before! Refrigerate the cake overnight and then pop it in the oven while you relax and open presents together. The original recipe recommends placing the streusel on the cake before you refrigerate it. I have found this drastically affects the texture of the streusel. For best results store the streusel and cake separately until you are ready to bake.


Oh my goodness Mindee! Goodness is what this is! I LOVE cinnamon! As far as I'm concerned there is no such thing as too much cinnamon! This coffee cake is great for me. However, it may be a tad too sweet for some. I love sweet so it's fine for me, however, I can see how some might think it too sweet. Personally, I love all of the cinnamony, gooey, goodness! I bake a lot of coffee cakes so thank you for a recipe to add to my repertorie.


This coffee cake is a riff on our yellow butter cake, which (not coincidentally) is also my favorite butter cake. The biggest difference is that I use sour cream instead of plain milk to give the cake a tender crumb and an ever-so-slight tanginess.


Bake the coffee cake for 40 to 50 minutes. Bake until the cake feels springy when you gently press the middle and a toothpick inserted in the middle comes out clean, 40 to 50 minutes. If the crumbs start to get too browned and toasted before the cake is done, tent the top of the cake loosely with aluminum foil.


Coffee cake with a middle crumb layer: If you prefer your coffee cake with a layer of cinnamon crumble running through the middle, bake it in an 8x8-inch pan instead. Divide both the batter and the crumble in half and layer it into the pan. Place a baking sheet under the pan during baking just in case the cake rises too much and some of the batter spills over the side. This will need additional baking time.


If you want your cake to be completely covered in frosting, I recommend you double the mascarpone frosting recipe. Personally, with the slight tartness mascarpone brings to the frosting, I love the balance of a partially frosted cake with the richness of the chocolate cake.


Sugared cranberries and rosemary sprigs scream Christmas cake to me and are one of my favorite ways to decorate a holiday cake. To decorate my chocolate coffee cake, I piled my sugar cranberries on top of the mascarpone frosting in a moon shape for an asymmetrical look.

Hi Sally, love your recipes!Made this coffee cake and it was great!The thing is, it was quite crumbly when I tried to take a piece off the baking dish. I used half whole wheat flour and half AP flour. Also I used milk and not buttermilk. Could this be the problem?In the end, nobody minded the crumbliness 2ff7e9595c
